Colombia Co-ferment

From Finca La Riviera in La Estrella, Risaralda, Colombia, this is a blend of three distinct Caturra lots, each a co-ferment experiment. Process guru Julio Quinceno adds fresh fruit, dried fruit, and natural fruit hydrosols during fermentation to create separate flavor profiles: passion fruit, stone fruit, and watermelon. The result is tropical, citric, and sweet—pineapple, raspberry, watermelon, and lychee with a playful, balanced intensity. Excellent as an iced pour-over on a hot day.
