From Pacaybamba, Cusco, this washed coffee showcases the rare SL9 variety—an Ethiopian-adjacent plant with geisha-like genetics and exceptional cup potential. Lisbeth Mariño, a leading female producer and cup taster in her district, hand-selected only ripe cherries, then applied an 18-hour fermentation followed by 36-hour dry fermentation before washing and 20 days of shade-dried drying. The cup sings with mango, plums, and juicy citrus at warmer stages, then unfolds into floral harmonies and sweet citrus complexity as it cools—a special, bottle-worthy coffee best enjoyed neat after two weeks rest.
