Peru La Pomarrosa
From Finca La Pomarrosa in La Higuera, Northern Peru, at 1800+ meters elevation, this coffee comes from the Silva-Fernandez family and their disease-resistant Colosay Bourbon hybrid. The roaster uses a modified washed process called "fruta madura"—extended in-cherry fermentation before depulping, then prolonged underwater fermentation after—which builds complexity and body. Expect raspberry, peach, and plum with caramel and pastry notes, balanced by a syrupy mouthfeel and pronounced sweetness. This is a partnership coffee with a young, experimental producer (Merci Fernandez) who manages Origin Coffee Lab's Colosay operation and continues advancing quality across their network.
