From Finca Santa Marta in Urrao, Antioquia, this single-varietal Chiroso grows at 1850 MASL on a 2-hectare farm Jose Londoño established four years ago. The washed process—featuring three-day fermentation in tile tanks before 8–12 days of drying—yields a clean, delicate cup with bright kiwi, melon, and tropical fruit notes that evolve into riper watermelon and papaya as it cools. Jose's hand-selected harvest and dedicated focus on quality make this his farm's standout debut.
