Colombia - Juliana Guevara and Wbeimar Lasso (Pink Bourbon Natural) (Cherry Lemonade, Stewed Fruits, Sweet Hibiscus)

This macerated natural Pink Bourbon comes from Finca La Terraza in southern Huila, Colombia, a region celebrated for its microlots and high-elevation microclimates. The coffee was hand-picked, fermented in full cherry for 18–24 hours, then dried on tables in full sun for 25–30 days in the farm's cool, high-altitude climate. The Pink Bourbon cultivar, a descendant of an Ethiopian landrace, produces rose-colored fruit when ripe and is prized for its delicate, amenable cup quality. Expect cherry lemonade, stewed fruits, and sweet hibiscus—a testament to both cultivar and precise processing by Juliana Guevara and Weimar Lasso.
