Grown at El Paraiso, Diego Bermudez's farm in Colombia, this Geisha undergoes a meticulous double anaerobic fermentation: 12 hours in sealed conditions, depulping, then 48 hours fermenting again with coffee pulp extract. This extended anaerobic contact intensifies fruit expression and complexity. The result is floral and delicate—jasmine, white grape, and yellow plum with a refined sweetness. Bermudez's combination of scientific precision and fermentation expertise creates a coffee that showcases how processing can unlock exceptional, wine-like character in specialty lots.
