Produced by Nestor Lasso and his brother Adrian at Finca El Diviso in Colombia, this coffee showcases the rare Ombligón variety—named for its distinctive belly-button shape. The cherries underwent a complex fermentation: 48 hours oxidizing in mosto, thermal shock, then 38 hours of anaerobic fermentation with brewer's yeast before careful drying and stabilization. The result is unmistakably fruit-forward, delivering vivid notes of watermelon Jolly Rancher, peach, and white sugar in a cup that balances innovation with drinkability.
