Wilder Lazo, a geneticist and quality-focused producer at Bella Alajandria farm in Colombia, crafted this lot by hand-selecting the ripest cherries and floating out low-density fruit. The beans were depulped and fermented anaerobically with CO2 injection for 48 hours, then dried in two stages—first in a covered chamber, then on parabolic trays—to achieve precise moisture control. The result is a vibrant cup with distinct notes of sweet lemon bar, orange blossom, and fig, showcasing the clarity and complexity that careful fermentation and drying can unlock in specialty coffee.
