Finca La Roca IV - Jorge Rojas
Prodigal menu champion Jorge Rojas brings us this gorgeous, white-honey geisha. The white-honey process leaves very little fruit in contact with the parchment layer, lending just the right amount of coffee-cherry goodness to ripen up the fruit flavors. We tasted a beautiful combo of peach, orange blossom, and mango. This coffee went to ourMonthly Subscribersfirst and just a couple bags remain from that roast, rested and ready to ship! We also have just a tiny bit available as green coffee for home roasters too! Jorge grew this geisha at his farm, Finca La Roca, a 7-hectare certified organic farm. This coffee was floated to remove defects, then fermented for 48 hours. Depulping left a tiny amount of fruit in contact with the seed — the white honey process. It then dried for 14 days and then we rushed it to Prodigal to preserve quality. Make sure to check that the roast date you've selected is what you're looking for— if there is an"upcoming roast" for this coffee, the upcoming roast date is listed under the tasting notes at the top of this product page.
