Prime Reserve

Grown in Huila, Colombia by producer Maria Rodriguez and the Nucleo de gestion de Palestina farm association, this SL-28 variety underwent a two-stage anaerobic fermentation: 48 hours of sealed whole cherry fermentation followed by 72 hours post-pulping without oxygen, then air-flow dried for 16–20 days. The result is clean and bright—cherry, mandarin orange, and grape with a subtle red wine finish and pleasant depth. SL-28 is traditionally Kenyan, but this special Colombian expression shows the variety's complexity in a new terroir.
