Tabi Andino comes from El Porvenir farm in Huila, Colombia, where brothers Argemiro and Darwin Bustos have built an organic-certified operation. The coffee is simply washed: fermented for just 24 hours and slowly dried over 19–24 days, a process that preserves delicate fruit character. On the cupping table, it reveals perky grapefruit alongside nuanced cherry and caramel—a flavor profile that works beautifully in both filter and espresso formats. Prodigal rarely sources the Tabi variety, but this lot's complexity and the Bustos brothers' commitment to farm improvements make it worth seeking out.
