After 30 hours of underwater fermentation, the cherries are pulped, washed, and dried in temperature-controlled conditions—a deliberate washed process that showcases the varietal's inherent character. Expect a well-structured cup with white grape, juicy raisin, and apricot, supported by secondary notes of tamarind, green grape, baker's chocolate, and hazelnut.
