From LaREB's partnership in Colombia's Southern Huila region, this Bourbon Rosado varietal grows at 1,720 meters in Palestina, Santa Bárbara. Luis Édgar Camacho employs a meticulous washed process: ripe cherry selection, 48-hour in-husk rest, 48-hour closed dry fermentation, then 15 days greenhouse drying—all designed to preserve delicate complexity. In the cup, expect sorghum sweetness and tulip florals at lower extractions that morph into bright prickly pear fruit when pushed harder, making this a playground for pourover experimentation. This is a distinctly light roast (144.4 on the roaster's scale) best appreciated after a minimum 4-week rest, rewarding careful technique.
