Colombia Double Fermented & Washed Java Huila

This Java varietal comes from 14 family farms in Palestina, Huila, coordinated by Mastercol Coffees, grown at 1600–2000 masl. The double fermentation process—36–48 hours of cherry fermentation in nylon bags followed by 50–80 hours of parchment fermentation—intensifies internal sugars and fruit clarity before traditional washed finishing. In the cup: grapefruit, mixed melons, and iris notes with unexpected brightness.
