Grown in Popayan, Cauca at 1500–2070 masl, this decaf blends Castillo, Catimor, Typica, and Caturra varietals. The washed process and sugarcane EA decaffeination preserve clarity and complexity—stonefruit tones with spice in the finish that rivals non-decaf cups. Pull long, slow shots (1:2–1:3 ratios) or brew it any way; it holds up to aggressive brewing without falling flat. A decaf that doesn't taste like an apology.
