Colombia Santa Monica Cinnamon Honey Pink Bourbon

Grown by third-generation farmer Jairo Arcila in Quindío at 1450–1500 masl, this Pink Bourbon underwent a 72-hour anaerobic fermentation with yeast, tartaric acid, and organic cinnamon before pulping and drying on raised beds. The cup is exceptionally clean and tea-like, with natural cinnamon tones in the finish—nothing candy-like or obtrusive. A limited Roaster's Select microlot that rewards curiosity over pure volume, perfect for those seeking subtle, seasonal complexity.
