This is a 100% Geisha microlot from Jairo Arcila's Finca Santa Mónica in Quindío, Colombia, grown at 1450–1500 masl. It undergoes the innovative EF2 (Extended Fermentation 2) process: 24 hours of aerobic fermentation followed by 50+ hours of anaerobic fermentation in sealed bags, then slow patio drying over 15–18 days. The result is intensely complex and fruit-forward—lighter extractions reveal grape juice and rice wine; heavier pulls bring tart strawberry and SweetTart candy notes, with a distinct funkiness that shines in espresso. This is a limited Roaster's Select release designed for those seeking experimental, rare lots; the roaster notes personal preference for lower extraction to balance the fermentation character.
