Colombia Santa Monica Jairo's Holiday Pies (Peach & Cinnamon)
This is a 50/50 blend of two honey coferments from Jairo Arcila's farms in Quindío, Colombia, grown at 1,450–1,500 masl and dried on raised beds. The cofermentation process amplifies aromatic complexity; the addition of cinnamon pushes forward fruit character while tempering candy-like sweetness. Expect pronounced peach and spice notes characteristic of these experimental lots. A limited, festive release from a third-generation producer whose sons' expertise in processing has elevated his coffees to showcase-worthy profiles.
