Grown by Yoiner Mosquera in southern Huila's Palestina region at 1,600 masl, this Rosado varietal undergoes an anoxic natural process with overripe fruit selection, 72-hour in-husk fermentation in sealed containers, and 20 days of greenhouse drying. The cup delivers mixed fruits and florals in balanced but layered form—flavors that resist easy separation, suggesting depth. Roasted far beyond typical range (extraordinarily light), it demands a minimum 6-week rest before brewing. A promising first-batch offering from new partner LaREB that rewards patience and precise brewing.
