El Salvador El Gobiado Rainbow Bourbon Anaerobic Natural

From Finca El Gobiado in Ahuachapan's Illamatepec mountains at 1,300m, this four-generation family farm's Orange, Yellow & Red Bourbon underwent 96-hour anaerobic fermentation in cherry, then dried naturally on raised beds for 20+ days. The result is a strikingly clean anaerobic natural that brews as a fruit cocktail of mango, papaya, nectarine, and cherry with subtle maraschino notes—tropical and bright without funk. A very light roast (146.0) that's flexible to recipe and remarkably fast-brewing; skip extraction targets and taste to dial in.
