From Urrao, Antioquia at 1,800 masl, this is SEY's first harvest from producer Héctor Londoño as part of their growing Chiroso variety project. The processing is meticulous: hand-picked at peak ripeness, floated to remove defects, held in-cherry for two days, de-pulped, then fermented underwater for three additional days before washing and drying on raised beds. The cup delivers a bright tropical profile with melon and soft florals. Chiroso, an Ethiopian Landrace recently identified and cultivated in this Colombian region, is proving exceptional—this lot exemplifies why SEY has built a dedicated buying program around it.
