This lot comes from Renardo Ovalle, one of Huehuetenango's most distinguished coffee producers, grown on one of Nayo's smaller farms. Planted with the San Ramon dwarf variety alongside robust Pacas and processed anaerobically, it breaks from the profile you'd typically expect from the region. The anaerobic fermentation pushes the cup toward tropical juiciness and a rich, rounded body. It finishes with a distinctive touch of nougat.
