From Alirio Ortega's El Roble farm in Bruselas, Huila—Colombia's most prolific coffee region—this Red Bourbon grows at 1,650 meters in the southwest's diverse microclimates. Alirio begins with 28 hours of in-cherry fermentation before depulping, then continues fermenting for 36–72 hours in plastic before washing and a full 20-day dry. The extended fermentation develops complexity while the washed process and careful drying preserve clarity. Scored 87.5 by Subtext, this represents one of seven microlots from Alirio's 2026 harvest—a producer whose family has earned their loyalty over five consecutive years through consistent quality and biodynamic farming practices.
