Emiliano Popayan's two-hectare farm sits at an exceptional 2,310 meters in Arboleda, Nariño, where high altitude and unique evening microclimates allow slow cherry maturation over four to five weeks. The washed process employs two fermentation stages and double washing, with cherries fermented on mats for 40 hours before depulping and tank fermentation for 50 hours, then sun-dried for 20–22 days. Caturra at this elevation develops strong quality potential, and this lot's careful processing yields the deep, wine-red colored cherries Emiliano is known for. Subtext cupped this at 86.5 and sourced it directly after visiting the farm—a first-year lot worth seeking out for its terroir-driven complexity.
