Grown at 1,800 meters in La Pradera, Nariño, Colombia, this Pink Bourbon comes from Frank Torres Farm—a two-hectare operation managed by four siblings pioneering sustainable, biodiverse coffee farming. The Hydro Honey process is a sophisticated controlled fermentation: cherries are cleaned with ozonated water, then submerged in a bioreactor where microbiological activity is precisely monitored and oxygen is injected at specific intervals over 48–64 hours. Constant pressure of 5.5 bars is applied throughout, and progressive drying follows—first at 20°C, then 35°C—to seal the beans and preserve fermentation-derived aromatics. Pink Bourbon, genetically confirmed as an Ethiopian landrace, is prized for its distinctive pink-ripened cherries and complex flavor profile.
