Colombia Frank Torres, Semi-Washed Caturra
Frank Torres grows Caturra at 1,800 masl in La Pradera, Nariño, a region defined by steep slopes, high altitude, and a unique microclimate that allows coffee cultivation at elevations rare elsewhere in Colombia. The semi-washed process is meticulous: after late-harvest selection and flotation sorting, cherries are depulped, then subjected to a 12-hour controlled oxidation with ozonated water and 10% must from a prior batch, before careful drying on raised beds. This technique preserves volatile compounds developed during fermentation while maintaining clarity. The Torres family—led by Frank, an agronomist and community leader—manages their two-hectare farm with a focus on biodiversity and sustainable ecology, and has been cultivating coffee for over 50 years. Subtext has returned to this lot five seasons running.
