Benjamin Paz, a three-time Honduras Cup of Excellence winner, produced this Geisha on his La Salsa farm in El Cedral at 1,600 meters. The coffee underwent Dark Room Drying (DRD)—a pioneering process in Honduras where whole cherries ferment in climate-controlled shipping containers (17°C, 35% humidity) before finishing in solar tents, slowing fermentation to preserve clarity. The cup delivers florality uncommon in naturals alongside dominant fruit notes: lychee, mango, and grape at temperature, shifting to quince and apple as it cools, with persistent bergamot and wine-like qualities throughout. This is the same coffee that won first and second place at the 2024 United States Barista Competition, making it historically significant and exceptionally limited.
