Bombe - Honey
From Bensa in Sidama's high-elevation terroir, this lot comes from Alo Coffee, a producer who won Ethiopia's Cup of Excellence in 2021. The honey process—a water-conserving method gaining ground in Ethiopia's increasingly arid climate—leaves substantial mucilage intact for fermentation, creating dark, sticky fruit layers that are rinsed away after one week, then dried to optimal moisture. On the cup, it reads like a delicate washed coffee elevated by honey processing's signature yellow fruits: mango and nectarine sit alongside pronounced white flower aromatics, with a tea-like body reminiscent of oolong steeped with lemon zest. This is refined, seasonal Ethiopian specialty coffee.
