The honey process—where cherries are de-pulped and dried with mucilage for 12 days—creates a flavor profile that balances the clarity of washed coffees with the fruit-forward character of naturals. Expect heavy stone fruit notes of orange, apricot, and black cherry, anchored by striking sweetness and a surprising black currant undertone reminiscent of top Kenyan lots.
