This coffee blends two washed Geisha lots from the Santa Bárbara region of Honduras, sourced from the Sagastumes and Morenos—two renowned producing families with deep roots in specialty coffee. Pedro Sagastume, a third-generation producer, established Los Quetzales in El Sauce and began growing Geisha in 2018; the Moreno family, pioneers of specialty coffee in Santa Bárbara, now spans over 30 family members across multiple plots, with patriarch Pedro and son Evin both contributing to this blend. Each lot underwent traditional washed processing with handpicking at peak ripeness, quality sorting, pulping, underwater fermentation, and drying on raised beds. The cup delivers soft florals and stone fruit alongside a complex acid structure reminiscent of lemon zest, full body, and a signature confectionary, nutty sweetness evoking praline—a masterclass in what makes Honduran Geisha compelling.
