From the Shakiso region of Guji, Ethiopia, at 2000–2200 masl, this coffee showcases the Gibirinna 74110 and Serto 74112 varietals grown by smallholder farmers supplying the Suke drying station. The anaerobic natural process—72 hours in sealed containers followed by 25 days of drying—creates a clean yet deeply fruited profile with wild-fermentation character more akin to apple wine than typical coffee fermentation. Expect blueberry, cranberry, and apricot notes layered with baking spice complexity, all wrapped in surprising sweetness and drinkability that sets it apart from standard wine-style naturals.
