From Rosalba Cifuentes and her extended family in Bella Vista, Chiapas, this washed coffee represents a unique collective model where Rosalba, Eugenio, Froilan, Otoniel, and Omar each farm and process separately before pooling their dried coffee. Rosalba founded Mayan Harvest to support smallholder farmers in the region, bringing both expertise and community commitment to this lot. The washed process yields a clean, approachable cup with pancake and syrup sweetness layered against dried fruits and orange slice candy—nuanced enough to reward attention without demanding it. A solid opener to Mexico and Central America season.
