The finest lots come from the highland states of Chiapas and Oaxaca, where smallholder farmers — many of indigenous communities — grow coffee at elevations above 1,500 meters. Mexican specialty coffee tends toward mild acidity, chocolate and nut sweetness, and a smooth, approachable body.
