Mauricio Giron's coffee grows at 1,500 meters in Chiapas's El Triunfo, a UNESCO-protected biodiversity hotspot where proximity to the ocean and mountain streams create ideal conditions for complexity. Processed as honey, the method adds body and sweetness to complement the natural terroir. Expect blackberry, watermelon, cherry, plum, and apricot with a distinctive funk that gives this coffee memorable character and depth.
