From the renowned Lugmapata farm in Chimborazo, Ecuador—a Cup of Excellence award winner—this limited lot showcases producer Enrique Merino's consistent excellence. The coffee underwent submerged, cold fermentation at 19–20 °C for 72 hours, a technique that slows oxidation and deepens flavor development, followed by covered drying.
