From Alo Coffee in Bensa, Sidama—founded by Cup of Excellence winner Tamiru—this high-altitude natural (2360–2480 m) undergoes 72-hour anaerobic fermentation before sun-drying in cherry. The extended fermentation amplifies complexity and brightness while the natural process deepens fruit character. Expect juicy asian pear and raspberry with a lingering candied orange finish, all wrapped in a clean, spice-driven backbone that belies the experimental processing.
