Kartika varietal grown by Pak Parum and smallholder farmers at 1200–1300 masl in Bali, processed through Karana Global's extended fermentation anaerobic natural method. Harvested ripe (20–22 brix), floated and washed, then inoculated with Pichia kudriavzeii yeast and macerated for 72 hours until pH drops to 4.0, followed by 15–20 days of patio drying. The cup delivers candied red and blue berries with a juicy, clean sweetness when brewed with low agitation and coarser grinds; push the extraction and anaerobic funk becomes more prominent. This is a deliberate experimental lot from S&W's Roaster's Select Program—worth trying for its unusual fermentation profile and vibrant fruit character.
