Ethiopia Faysel Yonis G1 Anaerobic Natural

Grown by Faysel Abdosh Yonis at 1950–2150 masl in Sidama's Keramo district, this G1 lot undergoes a controlled anaerobic natural process: seven days of sealed fermentation in temperature-regulated tanks (targeting pH 3.8), followed by 30 days of shade drying on African beds. The result is a wildly extraction-sensitive cup that shifts from blueberry and red fruit at lower pulls, to violet and iris florals with mellow stone fruit at medium extraction, to funky fermented notes at higher extractions—a natural Ethiopian that rewards dialing in but resists one-size-fits-all brewing. This is the kind of coffee that reminds you why you fell in love with specialty coffee in the first place.
