The wet-hulled (giling basah) processing—depulping, 12-hour fermentation, mechanical hulling at precise moisture, then patio drying—delivers the signature heft and minerality of traditional Sumatran technique but with unusual cleanliness and sweetness. Expect a dense body with blood orange, five spice, and lavender notes; the medium roast amplifies spice while maintaining those floral, citrus threads.
