Hand-picked fruit was floated, de-pulped, then dry-fermented for 24 hours before washing and 15-day raised-bed drying—a process that amplifies the varietal's distinctive aromatics. The cup delivers classic Sidra profile: dragon fruit, eucalyptus, and stone fruit. As sourcing in Ecuador grows increasingly difficult, this small but compelling lot represents the region's undeniable quality and SEY's continued commitment to its origins there.
