Finca Salomé in Honduras has been cultivated since 1960 by Virgilio and Salomé Guzman, featuring an uncommon mix of heritage Bourbon and Typica trees alongside younger Pacas—a combination that creates a distinctive flavor profile. The interplay between mature and young plants produces a coffee of notable refinement, with delicate fruit-forward character and floral undertones. Tasting notes include nectarine, dates, and vanilla bean. After eleven years on Sightglass's menu, this coffee remains a standout for its singular character and the story of old-growth terroir it represents.
